Enchillada casserole

This is so Yummy!
1 pound ground beef

1 chopped onion

1 can (about 10 ounces) red enchilada sauce

1 can (10 1/2 ounce) condensed cream of mushroom soup

1 can (10 1/4 ounce) cream of chicken soup

1 can (4 ounces) chopped green chile peppers

1 package (about 7 ounces) tortilla chips,

3 or 4 cups grated Cheddar cheese or Mexican cheese blend



PREPARATION:

Preheat oven to 375°
In a large skillet, brown ground beef with onion; remove from heat and drain off excess fat. Add sauce, soups, chopped chile peppers, mix well.

In a greased 9x13x2-inch baking pan, place a layer of tortilla chips; top with half of the ground beef mixture, and 1/2 of the cheese. Layer tortilla chips, then remaining meat mixture. Sprinkle cheddar cheese and hen topwith a single layer of chips. Bake at 375° for 35 to 40 minutes. Let stand for 10 minutes before serving.

Creamy Chicken Broccoli Rice Skillet

1/2 C mayo
1 # boneless skinless chicken breasts
2 C water
1 pkg(10 oz) frozen broccoli thawed or 2 C fresh
1/2 # (8 oz.) Velveeta
2 C Minute Rice.

Heat mayo in large skillet, add the chicken, cubed. Completely cook chicken, about 8 min.
Add water, broccoli, and Velveeta, cubed. Bring to a boil.
Stir in rice, uncooked. Cover and remove from heat.
Let stand 5 minutes and serve. Makes 4 servings.

Quick and Easy no Time Appetizer

For Christmas I had four different things to make so I wanted at least one easy appetizer. My friend suggested this........

One block of cream cheese
One bottle of Chipotle Raspberry sauce
Townhouse Flip Pretzels

Directions:

Lay out one Block of cream Cheese (I did two)
Pour sauce (Found in BBQ aisle) over cream cheese.
Serve only with Townhouse Flips (Crackers)

This was so easy and so worth putting out. It was a very big hit at the Christmas Party I went to. If you are looking to save time, this is the appetizer to bring.

Bow Tie Pasta

1 can beef broth
1 can Italian diced tomatoes
½ pound bow tie noodles
1 lb ground beef
1 cup shredded Italian cheese blend

Brown ground beef and set aside. In large pot, add pasta, tomatoes, and beef broth. Cook noodles in mixture according to the box. (may have to add a little water to make sure noodles are covered) Stir in beef and cheese.

Fools Toffee

2 sticks of butter
1 C packed brown sugar
About 36 saltine crackers
6 Hershey Bars
½ C chopped pecans or walnuts
1 tsp. vanilla

Layer crackers salted side up on sprayed jelly roll pan. Melt butter and brown sugar in saucepan, boil 5 min. Add vanilla. Pour butter mixture over crackers, spreading evenly. Bake 375 degrees for 5 minutes. Turn off oven. Place Hershey bars on top and put back in oven for 1 minute. Spread chocolate and sprinkle with nuts. Let cool and break into pieces.
