Crab English Muffins

This is a great appetizer!

Crab English Muffins

1 stick butter
1 jar Kraft Old English Cheddar Cheese spread[ 5 oz.]
1-1/2 tsp. mayo
1/4 garlic salt[ if you use powder use less than 1/4]
6 oz. can crabmeat
6 English muffins

Bring ingredients to room temp. Mix first four ingredients together, add crab meat. Split muffins in half, and frost with the crabmeat mixture. Cut muffins in quarters and freeze. Do not defrost before baking. Bake for 10 minutes at 400 degrees, then broil till bubbly and crisp. Makes 48 pieces.

Twinkie Cake

1 box of Twinkies
1 Large box Jello
Cool Whip

Make jello as directed on the box, put in refrigerator to cool but not set. Slice Twinkies in half lengthwise and place in 9 x 12 inch pan[cream side up]. Spoon  cold  jello over the Twinkies and refrigerate until set. Spread cool whip over top before serving.

*** I have used strawberry jello and placed fresh sliced  strawberries on top before adding jello and I have also used cherry jello and put cherry pie filling on top before adding jello. Both of these got rave reviews. You probably can make with peaches or raspberries too.

Corn with Browned Butter

Wow! I tried this yesterday and it is great.

6 ears of corn or 3-4 cups frozen corn
4 Tbs butter
1/4 C grated hard cheese [Parmesan, Romano, etc.]
2 Tbs chopped parsley

If using fresh corn, shave the kernels off the cob.
Over medium heat, melt the butter until it has a deep brown color and noticeably nutty aroma, about 3-5 minutes.
Add the corn, stir a few times and turn the heat to medium low. Cover and cook for 5 minutes, stirring once or twice.
Stir in cheese and parsley, add salt to taste.

Corn and Jicama Salad

This is great at this time of year when fresh sweet corn is at it's peak. C

4 ears of fresh corn cut off the cob
1 C jicama diced
1/2 C diced red onion
1/2 C diced red pepper
1 Tbs chopped cilantro
1 large lime
vegetable oil
salt & pepper to taste

Juice the lime and stir in enough oil to equal 3/4 C. Mix all together

Original Recipe Yield 6 servings
Ingredients
2 eggs
2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
6 medium potatoes, peeled and shredded
1/2 cup finely chopped onion
1/4 cup vegetable oil

Directions
1.In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion.
2.Heat oil in a large skillet over medium heat. In batches, drop heaping tablespoonfuls of the potato mixture into the skillet. Press to flatten. Cook about 3 minutes on each side, until browned and crisp. Drain on paper towels.

Swedish Meatballs

I needed a dish for a pot luck lunch and bought Swedish meatballs from Ikea, 2.5 pounds for $7. They also sell the gravy in a pouch that requires you to add water and cream. They were a big hit and they were delish. Just an easy dish to make. Serve with noodles, rice or mashed potatoes.
